Serves: 1.5 (me & my toddler!)
Total Time: 10 minutes
Ingredients:
6-7 medium ice cubes
1 full mango (tutorial on how to dice mango here)
5-6 fresh strawberries
1/4 cup unsweetened shredded coconut
2 scoops of vanilla protein powder
1/4 cup oats
1/4 cup coconut milk (from can)
1 cup almond or coconut milk (from carton)
1 tsp chia seeds
1 tsp ground flax seeds
1 cup spinach (optional)
Directions:
- Dice mango (full tutorial available here, and while you’re add it, subscribe!)
- Cut green stems off of strawberries
- Add all ingredients to a blender and blend on high for 60-90 seconds
- Top with additional mango, strawberries, and coconut flakes
- Enjoy!
I love the authenticity and taste of using fresh fruit in smoothies, especially when they are in season! This smoothie is refreshing and is a great alternative to a traditional banana/peanut butter/chocolate smoothie. I love drinking smoothies as a meal replacement a few times a week – it really helps give your digestive tract a break while still giving you tons of nutrients! If fresh fruit is not an option, frozen will work too.
