Total Time: 20 minutes
Ingredients:
4-5 Potatoes of your choice (russet, sweet, Yukon)
1 can garbanzo beans
4 cups spinach
1 cup chopped green onions
1 cup chopped cliantro
1 cup of your favorite salsa (I love Kirklands organic salsa)
2 avocados
Salt & Pepper to taste
Directions:
- Cook potatoes based on preference, either bake in oven on 400 degrees F for 45-60 minutes, or place in microwavable safe container and cook on high for 5-10 minutes (be sure to poke holes in potatoes with a fork before microwaving)
- Divide ingredients between four potatoes in the following order: potato, spinach, garbanzo beans, green onions, cilantro, salsa, & avocados
- Top with salt & pepper
- Enjoy!
This idea came on the fly as 5:00pm crept up and I had NO plans for dinner! We had leftover potatoes from a previous meal and in 10 minutes we had a delicious and nutritious vegetable baked potato! There are so many different ways to make this… you can add more veggies including broccoli, mushrooms, peppers, and sweet onions! Basically, whatever you have in your fridge will work on a potato! Yum!
