Serves: 4-5
Total Time: 35 minutes
Ingredients:
1.5 cups uncooked quinoa
1 cup kale
2 medium oranges
1/2 cup shelled pistachios
1 cup dried cranberries
1/2 cup fresh mint leaves
1 can garbanzo beans
1/2 cup orange juice
Salt & Pepper to taste
Directions:
- Measure out quinoa and 3 cups of water in a medium sized pot. Bring to a boil then reduce heat to a low simmer and cover. Cook for 20-25 minutes until water has evaporated
- Chop kale into smaller pieces, set aside into large mixing bowl
- Peel and chop oranges into 1-inch pieces, set aside with kale
- Add pistachios, cranberries, mint leaves, and garbanzo beans to kale mixture
- Once quinoa is done cooking, add to kale/fruit mixture
- Add orange juice, salt, & pepper and thoroughly mix together
- Enjoy!
Lunches can get pretty boring and repetitious! I love to mix things up with a more unusual salad that packs in whole grains (quinoa), protein (garbanzo beans), healthy fats (pistachios), fruits (oranges & cranberries, vegetables (kale), and tons of flavor! You can meal prep this on Sunday and eat it all week for lunch, it’s a great recipe to keep in the fridge.
