Total Time: 35 minutes
Ingredients:
3 cups rolled oats
1 cup almonds
1 cup pecans
1/2 cup pumpkin seeds
1/3 cup coconut oil
1/4 cup honey
1 tsp vanilla extract
Directions:
- Preheat the oven to 350 degrees F
- Line a baking sheet with parchment paper
- Combine oats, nuts, and pumpkin seeds in a large mixing bowl
- Measure out coconut oil and honey in a small pot and bring to a slow boil until coconut oil is completely melted. Take off heat and add vanilla. (If you want this step to be quicker you can microwave for 30 seconds)
- Stir mixture until coconut oil has completely dissolved
- Pour liquid mixture over oat mixture and stir completely and pour mixture on parchment paper
- Bake for 15 minutes, pull out of oven and stir, then bake for another 5-7 minutes or until granola turns light brown
- Let cool for 10 minutes in order to harden
- Enjoy!
I love granola… but I hate store bought prices! Every time I buy granola it’s usually too sugary, too oat-y, too nutty, or too bland… until I made this recipe! It has the oat and nutty flavors with a sweet hint of honey & vanilla.
You can eat this for breakfast with almond milk, eat for a midday snack, or bring as a side for lunch!
