Tuna Salad with Avocado Mayo

Single Batch: Serves 3-4, Double Batch: Serves 6-8

Total Time: 20 Minutes

Ingredients:

24 oz. wild caught tuna (canned)

4 stalks celery

1 cup red or black grapes

1/2 cup chopped walnuts

1/3 cup avocado mayo

1/2 tsp minced garlic

1/4 cup chopped fresh parsley

1 Tbps dill

Salt & Pepper to taste

Directions:

  1. Remove tuna from cans and put into large mixing bowl
  2. Chop celery and walnuts (if not already chopped), slice grapes in half and add to tuna mixture
  3. Add remaining ingredients and mix well
  4. Top with extra parsley if wanted
  5. Enjoy!

I love making this recipe in bulk and eating it for multiple lunches! It’s great to take to work and keeps you FULL so you don’t hit that 2:30pm crash!
