Tomato Basil Avocado Egg Bites

Single Batch: Serves 2-3, Double Batch Serves: 4-6

Total Cook Time: 30 minutes


3 avocados

3-4 large eggs

1 roma tomato

5-6 fresh basil leaves

Salt & Pepper to taste


  1. Preheat oven to 425 degrees F
  2. Slice avocados in half and remove seeds. Scoop out a little avocado in order to make more room for egg mixture
  3. Mix together eggs and diced tomato in a mixing bowl
  4. Add salt and pepper to taste to egg mixture
  5. Set avocados on baking sheet and very carefully pour (or spoon) egg mixture into avocado holes
  6. Bake for 18 minutes
  7. Top with chopped basil
  8. Enjoy!

This power breakfast (and actually, we eat it a lot for lunch!) is full of healthy fats, protein, and carbohydrates (yes, we DO want to eat carbs too!) that will keep you full until your next meal. I used tomatoes and basil from my mother’s garden which made it EXTRA tasty and nutritious!
