From Scratch Sweet Potato Sloppy Joes (Vegetarian Option too!)

Single Batch: Serves 5-6, Double Batch Serves: 10-12

Total Time: 1 Hour

Ingredients:

2 Tbps clarified ghee (or olive oil)

1 sweet onion

1 green pepper

1 tsp minced garlic

1 tsp chili pepper

1 tsp paprika

6 sweet potatoes

6 large or 10 small dates

2 lbs venison (or 100% grass fed beef)*

2, 15 oz cans tomato sauce

1 can tomato paste

1 Tbps apple cider vinegar

2 Tbps mustard

1 tsp salt

1 tsp pepper

Directions:

  1. Preheat the oven to 400 degrees F
  2. Wrap sweet potatoes in aluminum foil and place on baking sheet
  3. In the meantime, dice onion and green pepper (I love using this chopper) and sauté with clarified ghee on medium heat (about 10-15 minutes, until onions are translucent)
  4. Add garlic, chili pepper, and paprika to onion/green pepper mixture
  5. In a small pot, bring 1 cup of water to a boil and add dates for 2-3 minutes to soften
  6. Place sweet potatoes in oven once preheated and bake for 45 minutes to 1 hour (until easily cut with knife)
  7. Add venison (or beef, tempeh) to onion/green pepper mixture and cook thoroughly
  8. Place dates, tomato sauce, tomato paste, and apple cider vinegar in a blender, blend for 30-60 seconds until smooth
  9. Once meat is cooked, mix sauce with meat, onions, and green peppers
  10. Add mustard, salt, and pepper to the meat mix and stir
  11. Assemble sloppy joes
  12. Enjoy!

*Meat can be substituted for 16 oz. of tempeh. Tempeh is a wonderful grain blend that takes the flavor of whatever sauce you add it with!

My husband LOVES sloppy joes. However, I HATE the store bought sloppy joe mix that is filled with additives, high fructose syrups, sugar, and unhealthy oils. So I began my mission to make my own sloppy joes that would be filled with nutrients, vegetables, and whole ingredients that my husband would approve! Accomplished!
