Single Batch: Serves 6-8, Double Batch: 12-14
Cooking Time: 20 minutes
Ingredients:
6 medium/large Avocados
1 Roma tomato
1/2 cup large red onion
1 tsp minced garlic
1/4 cup cilantro
1 lime
1 tsp salt (or more to taste)
Black pepper (to taste)
Directions:
1. Remove seeds from avocados and scrape avocado from peel into a large mixing bowl
2. Use a potato masher to mash avocados until desired consistency
3. Dice tomato and red onion.
4. Mix into avocado mixture diced tomatoes & onions, garlic and chopped cilantro
5. Squeeze lime juice from 1 lime into mixture
6. Add salt & pepper to taste
7. Enjoy!
This is one of those recipes I had to force my mom to put “measurements” on. She naturally makes amazing guacamole by adding “a pinch of this, a pinch of that”! It has a lot of chunk to it which I LOVE! I put this on tacos, eggs, potatoes, and make it as a dip. Instead of traditional tortilla chips, try using this Guacamole with carrot sticks, cucumbers, and broccoli!
